A few months ago we were stuck in a cooking rut. And after nearly a month in hotels and hostels, we missed out on cooking altogether since we didn’t have a kitchen. Lately though, we’ve been staying in apartments again and are excited to have a kitchen and the opportunity to resume our quest for easy and tasty “home-cooked” meals. We struggled early on with limited ingredients and kitchen supplies, but have not given up trying to find budget friendly and simple recipes.
I am happy to announce that we had a couple new cooking successes in the past couple of weeks; the greatest of which was BBQ chicken & potatoes. It met all of our baseline criteria: simple, tasty and not too time consuming!
The inspiration came while in a corner store shopping for groceries. As we browsed the two isles, the BBQ sauce caught my attention. Meanwhile, Kevin picked up chicken breast as a welcome addition to our menu. That’s when it hit me…if we can make BBQ chicken at home in a crock pot with three ingredients, then why can’t we do the same in an oven? We decided that it was worth a try and since I was feeling bold, we even bought potatoes to throw in with it too!
The BBQ chicken recipe is simple:
- 1 pound of chicken breasts
- 1 bottle of BBQ sauce
- 1 can of Coke (or Coke Zero)
Our apartment in Budapest provided an oven and a baking pan. We placed all the ingredients in the pan (plus the chopped up potatoes), covered it with the lid and baked it for 40 minutes at ~180 degrees Celsius (or about 350 Fahrenheit). The meal was easy, delicious and one of our few cooking successes so far. It almost felt like we were at home!
